To mark the Diamond Jubilee, we asked former Royal chef Darren McGrady to come up with a sandwich fit for a Queen…

The Jubilee Celebration Sandwich
Flora wanted to do something really special to celebrate the Queen’s Diamond Jubilee and mark 250 years of the sandwich. So we decided to team up with Darren McGrady, a former chef to the Royal Family, to create the ultimate celebration sandwich!

The Flora Celebration Sandwich takes inspiration from the Queen’s most loved ingredients and is made using roast fillet of juniper-crusted Balmoral Estate venison, guinea fowl pâté, pea shoots and a ‘Gin & Dubonnet’ beetroot and apple relish.

The Queen’s favourite ingredients
Because he knows that game is featured on the Royal menu at least twice a week, Daren decided it would be the perfect choice for the Jubilee sandwich. He’s also integrated Gin & Dubonnet in his specially created relish, as this is Her Majesty’s favourite drink.

New healthier and tastier Flora is melted and infused with fresh thyme leaves, sour cream and Stilton cheese. This is blended into a puree and spread on the bread before the sliced venison is laid on top.

An everyday alternative
For a simpler sandwich alternative for everyday occasions, Daren recommends replacing the guinea fowl with chicken and pureeing it into a great-tasting pâté.

For a sandwich the whole family can enjoy, you can swap the gin and Dubonnet in the relish for beetroot and apple juice.

Who is Darren McGrady?
Darren was a former chef to Queen Elizabeth II as well as Princes William and Harry. In 1982 he moved to the Royal Kitchen at Buckingham Palace where for 11 years, he cooked for the Queen and the Duke of Edinburgh and their guests on a daily basis. Visit Darren’s website to find out more.
