Creating summer cupcakes

Summer means getting out and about and it’s a perfect time to go berry picking with the kids. Pile your berries on top of these yummy white chocolate cupcakes.
You will need
Easy-peasy cupcake mix
200g white Chocolate
100ml double cream
- Use the easy-peasy cupcake recipe and bake as normal.
- Meanwhile, melt 200g white chocolate and 100ml double cream together over a gentle heat in a saucepan, then allow to cool and pop into the fridge.
- Before piping the cooled cupcakes, whisk the ganache to make it light and fluffy, then top with an assortment of berries.
