Who’s Jac?

Jac is a food writer and a doting vegan mum who lives up in Scotland with her husband and little boy. Her simple and delicious recipes at Tinned Tomatoes shows us just how easy vegan family life can be.

Five Day Vegan Lunchbox Plan

As children get ready for a new school year, it’s time to get those lunchboxes out and start planning their lunches. And yes I did say planning.  It’s always a challenge to get children to sit down and eat their lunch.  All they want to do is eat quickly so they can run outside to play, so it’s important to make kids lunches as colourful, tasty and varied as possible.

To get you started I’ve created a five day lunchbox plan using Flora Freedom, but first here are my top three tips.

Monday

  • Pasta mixed with dairy free pesto, cucumber, sweetcorn and cherry tomatoes
  • Cucumber sticks
  • Carrot sticks
  • Strawberries
  • Pretzels

Make this pasta for the whole family the night before and set some aside for the lunchbox. It’s an easy and healthy family meal.

Tuesday

  • Houmous and grated carrot sandwiches
  • Cucumber sticks
  • Cherry tomatoes
  • Mini breadsticks
  • Blueberries

This is my favourite sandwich filling. It’s easy to make and nutritious. If you are likely to get complaints about the grated carrot, just grate it finer and mix it into the houmous. Sometimes you just have to be a little sneaky.

Wednesday

  • Cooked vegan sausages, cut into chunks
  • Olives
  • Cherry tomatoes
  • Bread spread with Flora Freedom
  • Pretzels
  • Blueberries
  • Nectarine

Add a little bento fork or toothpick for bite-size food, it makes it much more fun and less mess too.

Thursday

  • Falafel
  • Hummus
  • Carrot sticks
  • Cherry tomatoes
  • Breadsticks
  • Strawberries
  • Homemade Flapjacks

It’s great to add a home-baked treat occasionally. Flapjacks are super simple to bake and pretty healthy too. All you need is porridge oats, Flora Freedom and honey or agave nectar. They are that simple. You can also add dried fruit and chocolate chip.

Friday

  • Pinwheel jam sandwiches (mini wraps spread with Flora Freedom & jam, rolled and cut)
  • Cucumber sticks
  • Carrot sticks
  • Oatcakes
  • Strawberries
  • Dairy free yogurt with sprinkles

Pinwheels sandwiches are so much fun to make and eat. If you don’t have wraps, run a rolling pin over slices of bread to make them thinner and easier to roll, then add the topping, roll and cut the same way.
