Golden Potato & Herb Bake

A delicious, simple side dish recipe that goes well with roasted and grilled meats as well as vegetarian main courses. This golden potato and herb bake is easy: once you’ve sliced your potatoes as finely as possible – just layer them up with onions, herbs and sunny Flora Buttery (or Flora Cuisine) and you can pop them in the oven while you get everything else ready. Wait until it’s good and crispy before you take it out to slice up.

Ingredients

  • 55 g Flora Buttery margarine or 3-4 tbsps Flora Cuisine
  • 1 Medium onion, finely chopped
  • 0.5 tsp salt
  • 0.25 tsp each dried basil and thyme leaves
  • 0.25 tsp ground black pepper
  • 1 kg (2lb) potatoes, unpeeled, scrubbed, very thinly sliced

Directions

  1. Preheat oven to 220°C, gas mark 7. Melt margarine in a small saucepan or microwave. Brush a 10-inch (25cm) pie plate with margarine. To remaining margarine, stir in onion and seasonings.
  2. Arrange ⅓ of the potato slices in a circular pattern pie plate. Spoon ⅓ of the margarine mixture over top, spreading out onions as best you can. Repeat layers two more times.
  3. Cover and bake for 30 minutes.
  4. Uncover and continue to bake until potatoes are tender and crispy brown around the outside edge, about 30 more minutes.
  5. Let the bake stand for 10 minutes, then cut into wedges and serve.
