Easy & Tasty Lemon Cupcakes Recipe

These tangy little treats are so easy to make, you can turn them out whenever you fancy something sweet. This lemon cupcake recipe is super simple – just add lemon zest and lemon juice to Flora, caster sugar, eggs and flour (with baking powder to give it a lift). Beat well then divide into cases and bake until springy. The finishing touch is sour-sweet lemony buttercream icing.

Ingredients

  • 115 g (4oz) Flora Buttery or 115ml Flora Cuisine
  • 115 g (4oz) caster sugar
  • 2 eggs, Medium
  • 140 g (5oz) self-raising flour sieved together with ½ tsp baking powder
  • Zest of ½ lemon
  • 1 tbsp lemon juice
  • -Icing-
  • 85 g (3oz) Flora Buttery
  • 225 g (8oz) icing sugar, sieved
  • 1 tbsp lemon juice
  • Lemon zest to decorate

Directions

  1. Place all cake ingredients in a mixing bowl. Beat with a wooden spoon until well mixed for 2–3 minutes. Place mixture in 12 paper cases placed in a muffin tray.
  2. Bake in a preheated moderately hot oven 180ºC, 160ºC fan, gas mark 4 on second shelf from top for 15–20 minutes until soft and springy to the touch. Cool on a wire tray.
  3. For the icing, place all ingredients together in a mixing bowl and beat together until smooth. Spread evenly over the cakes and decorate with the lemon zest.
