  • 115 grams Flora
  • 115 grams soft brown sugar
  • 2 eggs
  • 115 grams self-raising flour
  • 1 small banana
  • 40 grams desiccated coconut
  • 150 gram soft cheese
  • 25 gram Flora
  • 1/4 tsp vanilla extract
  • 25 grams toasted coconut to serve

  1. Place all cake ingredients in a mixing bowl and beat until well blended (1-2 minutes).
  2. Place mixture in a greased and bottom lined 18cm (7 inch) deep cake tin and bake in preheated oven 180° C, 160° C fan oven, Gas mark 4 for 25-30 minutes.
  3. Turn out and cool on wire rack.
  4. For the icing, mix the cheese, Flora, sugar and vanilla together and spread over the cake.
  5. Finish with chosen decorations.
