Three Bean Burrito

- 1 tbsp. Flora Original
- 400g mixed beans
- 200g rice
- 4 small tortillas
- 2 tbsp. tomato salsa
- 2 tbsp. sour cream
- 1 red pepper, diced
- 1/2 clove garlic, grated
- 1 avocado, cut into 1cm cubes
- 1 lime, juice only
- Heat the Flora Original in a large non-stick frying pan.
- Add the red pepper and fry for 5 minutes, until softened. Next, add the garlic and cook for 2 minutes further, then tip in the rice and beans, stir and season. Fold the avocado chunks into the rice mix.
- Spread a tablespoon of sour cream into the bottom third of a tortilla wrap and top with a spoonful of salsa.
- Pile half the burrito filling on top then roll up tightly, tucking the sides as you go.
- Wrap in baking paper, tie with string and put into lunchboxes.
