  • 1 tbsp. Flora Original
  • 400g mixed beans
  • 200g rice
  • 4 small tortillas
  • 2 tbsp. tomato salsa
  • 2 tbsp. sour cream
  • 1 red pepper, diced
  • 1/2 clove garlic, grated
  • 1 avocado, cut into 1cm cubes
  • 1 lime, juice only
  1. Heat the Flora Original in a large non-stick frying pan.
  2. Add the red pepper and fry for 5 minutes, until softened. Next, add the garlic and cook for 2 minutes further, then tip in the rice and beans, stir and season. Fold the avocado chunks into the rice mix.
  3. Spread a tablespoon of sour cream into the bottom third of a tortilla wrap and top with a spoonful of salsa.
  4. Pile half the burrito filling on top then roll up tightly, tucking the sides as you go.
  5. Wrap in baking paper, tie with string and put into lunchboxes.
