Chocolate & Ginger Cookies

- 190 g plain flour
- 30 g cocoa powder
- 200 g golden caster sugar
- 1 1/2 teaspoons baking powder
- 1/2 tsp bicarbonate of soda
- 110 g Flora Plant B+tter Unsalted
- 3 tbsp plain yoghurt
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 1/2 tsps ground ginger 1 and a half tsps
- Preheat oven to 160c fan
- Sift the Flour, cocoa powder, baking powder, bicarbonate of soda ,ground ginger & cinnamon
- Cream the Flora Plant and sugar until light and fluffy
- Add yogurt and vanilla extract
- Add the flour mix and bring all together
- Use a small ice-cream scoop to form the dough into balls
- Dip each ball in the icing sugar
- Place on a baking tray lined with parchment paper 2 inches apart then chill for 5 mins
- Bake for 12-15 mins and leave to cool on the tray. Don’t worry if your biscuits appear to be soft they will harden as they cool
